Stock up on the finest sides of meat, age them to develop their flavor and tenderness, then fabricate them into escalopes: thin, tender, and highly sought-after cuts of meat.

Once you’ve prepared your signature cut, you’ll be ready to fill orders from high-end restaurants in hopes of establishing yourself as a top-class butcher.

But be wary, for when your supplier’s inventory runs low, a thief will come to steal your precious escalopes.
